Sweet Coleslaw

Matt informed me that I ruined him because, after having this, he doesn't like any other coleslaw that he has tried. It is super yummy! There is kind of a lot of sugar in it - but that is what makes it so good! The recipe calls for 1/2 cup of it - I actually use just under it. I am not exactly positive of the amount because I use the 1/2 cup measuring cup, I just don't fill it quite full. It is excellent alone or on top of saltine crackers (one of my favorite snacks!).



INGREDIENTS:
1 bag of coleslaw mix (16 oz)
2 Tablespoon diced onions (or 1 Tablespoon onion flakes)
2/3 cup Miracle Whip
3 Tablespoons Vegetable Oil
1 Tablespoon White Vinegar
1/2 cup White Sugar
1/4 teaspoon Salt


DIRECTIONS:
In a large bowl, mix everything except the coleslaw mix together until smooth. It will seem thick, but trust me, it works! Add in the coleslaw mix. Stir until completely coated. Chill for 1-2 hours before serving. Enjoy!

Lemon Garlic Grilled Chicken

This chicken is soooo good! It is good plain and on top of a salad. Im sure it would be delicious with pasta too but we haven't tried it that way yet.




INGREDIENTS:
6 tablespoons lemon juice
4 tablespoons vegetable oil
5 cloves garlic, chopped
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon dried oregano
1 pound chicken breasts, cut into slices (big enough to grill, small enough to soak up the marinade)

DIRECTIONS:
Mix all ingredients except for chicken. Pour over chicken and marinade in the fridge overnight. Grill and enjoy!

Taco Salad

This was one of the first meals Matt and I made together. It's really quick and easy (15 minutes, tops), but cooking is always more fun with someone else in the kitchen! Delicious on a hot day! Or a cold one haha, but I always think of it as a summer food.



INGREDIENTS:
1 lb ground beef
1/2 cup taco sauce
6 cups bite-sized lettuce
1 medium green bell pepper, cut into strips
2 medium tomatoes, cut into wedges
1 small can black olives, drained
1.5 cups shredded cheddar
Fritos
Thousand Island Dressing

DIRECTIONS:
Brown Beef. Drain. Stir in taco sauce. Cook 2-3 minutes.
Toss lettuce, bell pepper, tomatoes, olives, and cheese in a large bowl.
Spoon hot beef mixture over lettuce mixture. Toss.
Serve with dressing and Fritos.

NOTES:
Fritos and Dressing can be mixed into the salad, but stuff will get soggy if they sit for long. We like it better to just put some on the salad after dishing up.
